Environmentally-friendly vegetarian recipes to try when camping

Every little counts when it comes to protecting the planet, even when camping! And that also includes what we put in our plates, for example, reducing our meat consumption or using local seasonal products. Ready to take the plunge or try the experience for a few days? To help you get into the swing of things, we've selected some vegetarian dishes that will delight everyone. No need to panic: you won't have to spend hours at the stove preparing these quick and easy, extremely delicious vegetarian recipes that, naturally, can be adapted according to the seasonal fruit and vegetables available. Time to put on your apron!

1. Traditional salad

Or how to make a full balanced meal in record time. No need to spend hours cooking, take what you find in the fridge and simply add a touch of vinaigrette! Pasta, rice, quinoa, buckwheat, spelt: you can adapt the base according to what you like and simply add sweet or savoury ingredients, or even both. Easy, quick, delicious and entirely customisable!

Our quick and healthy salad ideas:

  • Cesar salad: a great classic that is a hit with everyone
  • Tomato-mozzarella salad, never out of fashion!
  • Rocket, prawn and orange salad for a vitamin-packed meal
  • Greek salad with tomatoes, feta, red onions and cucumber: guaranteed freshness and taste!
Salade césar
Pizza Margarita

2. The timeless pizza

With a cream base for the most daring or a tomato base for traditionalists, pizza is always a hit with food lovers and has the advantage of being infinitely customisable! 100% cheese, with roasted sun-drenched vegetables, thick or thin crust, or with a cauliflower base for a completely vegetable version (yes, that's right, it does exist and it's delicious), everyone can prepare THE pizza of their dreams!

  • For those who enjoy a sweet and sour combination: a pizza with Fourme d'Ambert cheese and pears. A gourmet treat in its purest form.
  • For traditionalists: a Margarita with its 3 key ingredients (tomatoes, mozzarella and fresh basil). Nothing could be more delicious and effective (there is a reason why Italians love it so much!)
  • For those with a big appetite: a calzone with a generous filling of vegetable-based ham (better than you might think), cheese and egg. A balanced meal in a pizza!

3. Vegetarian lasagne

Just as tasty as the original version, lasagne is the perfect dish for feeding your tribe without having to spend too much time cooking. Filled with delicious sun-drenched vegetables between two layers of lasagne, the most extreme food lovers can even add some white sauce with some grated cheese on the top as a finishing touch for even more taste. No need to be a top chef to prepare this recipe, even beginners can make it! And your efforts will be rewarded since each mouthful will remind you of the Italian sunshine. Buon appetito!

Tian de légumes

4. Vegetable tian

An emblematic dish of southern France, vegetable tian is a treat for the eyes and the taste buds. Only a few ingredients are needed to prepare this mosaic of colours: tomatoes, peppers, courgettes, aubergines, onions and herbes de Provence, of course! The more colours there are the better it is. A little olive oil and then pop it in oven: it's ready!

5. Grains!

To make up for the protein you would usually find in meat, remember to add grains and oleaginous seeds, a rather unattractive scientific name that refers to nuts (walnuts, almonds, pistachios, cashew nuts, and more). They are an alternative to pasta and rice in salads and are a delicious and healthy ingredient that can be added to all your dishes without moderation.

Our recipe ideas:

  • Buddha Bowl with sweet potato, bulgur wheat and roquefort cheese
  • Quinoa and buckwheat, goat's cheese and caramelised walnut salad
  • Quinoa, red pepper and feta croquettes
Salade de quinoa
ratatouille

6. Ratatouille

Take the same ingredients and start again! Aubergines, peppers, onions, courgettes and tomatoes (them again) form the basis of this Mediterranean vegetable stew emblematic of southern France. But, what is the difference between a ratatouille and a tian? That's easy: the first is a sort of vegetable stew, whereas a tian is a dish of layered vegetables baked in a tomato sauce.

7. Vegetarian burger

The magic word on which the entire family will agree! In the vegetarian version, the traditional steak is replaced by smoked tofu, cereal patties or even grilled halloumi, a cheese with a semi-firm texture from Cyprus that does not melt when cooked. The most experienced among you will even be able to make their own vegetable steak. Add some spices, grilled onions, bean sprouts, avocado, barbecue sauce and that's all there is to it! All that remains is for you to enjoy it!

Le burger végétarien

8. Bruschetta delight

Just a handful of ingredients is needed to make this VERY simple recipe direct from Italy. On a slice of country-style bread, add some tomatoes, mozzarella, a dash of olive oil, salt and pepper and basta! Then add some grilled tofu, walnuts, or any other ingredient you fancy. 10 minutes in the oven and it's ready.

Environmental protection at Sandaya

At Sandaya, we have also introduced several actions to help protect the biodiversity of our sites. Installation of energy-saving keys in our accommodation, electric vehicle charging points and water flow reducers to better monitor consumption, partnership with the LPO (France's bird protection league) and the CNPF (National Forest Ownership Centre) to promote the natural capital and protect biodiversity, not to mention the creation of beehives, botanical gardens and vegetable gardens. In response to our eco-responsible commitment, most of our campsites have obtained the internationally recognised "Clef Verte" label which guarantees sustainable and environmentally-friendly tourism.
